Directions:
- Rinse the strawberries and pat them dry. Carefully cut off the tops and hollow out the center of each strawberry using a small spoon or a melon baller.
- In a bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Fold in the mini chocolate chips into the cream cheese mixture.
- Using a small spoon or a piping bag, fill each hollowed strawberry with the cream cheese mixture.
- Dip the open end of each filled strawberry into the crushed graham crackers or digestive biscuits, coating the cream cheese layer.
- If desired, drizzle melted chocolate over the strawberries for an extra touch of sweetness.
- Chill the strawberries in the refrigerator for at least 30 minutes before serving.
