STEAK DIANE

Ingredients :

• 20ml (4 tsp) butter
• 100g mushrooms, sliced
• 2 spring onions, sliced
• 2 x 120-150g fillet steaks
• 30ml (2 tbsp) brandy
• 100ml stock
• 30ml (2 tbsp) sherry
• 45ml (3 tbsp) cream

Directions :

The butter is warmed in a frying pan. Add the spring onions and mushrooms, and cook until soft. From the pan, take out the mushrooms and onions, and set them aside. The steaks should be fried for three and a half minutes on each side in a little extra butter. Using the brandy with caution, flame.
Reduce the mixture to three-quarters of its original volume before adding the stock, sherry, and cream. Serve after incorporating the onions and mushrooms.
