  • 4 sheets puff pastry
  • 1 cup canned plain pumpkin
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • Coarse sugar (optional)
  • 1 large egg
  • 2 teaspoons water
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together 1 large egg and 2 teaspoons water to create an egg wash.
  3. In a large bowl, mix the pumpkin, granulated sugar, and pumpkin pie spice until smooth.
  4. Cut the puff pastry into squares and evenly distribute the pumpkin filling onto each piece.
  5. Roll up each pastry square, cut down the center leaving an inch uncut at the top, and twist.
  6. Shape into circles by bringing the ends together and pressing securely.
  7. Brush with egg wash and sprinkle coarse sugar if desired.
  8. Bake for 30-35 minutes until golden brown; then let cool slightly.
  9. Drizzle with a glaze made from powdered sugar, milk, and vanilla before serving.
