Ingredients:
For the Lamb Chops:
- 4 lamb chops
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp rosemary, finely chopped
- 1 tsp thyme, finely chopped
- Salt and pepper to taste
For the Mashed Potatoes:
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- 2 cloves garlic, minced
- Salt and pepper to taste
For the Asparagus:
- 1 bunch asparagus, ends trimmed
- 2 tbsp butter
- 1 lemon, zest, and juice
- Salt and pepper to taste
Directions:
- Lamb Chops:
- Preheat your grill or skillet over medium-high heat.
- Mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture over the lamb chops.
- Grill or sear the chops for 3-4 minutes on each side or until they reach your desired level of doneness.
- Let them rest for a few minutes before serving.
- Mashed Potatoes:
- Boil the potatoes in salted water until tender, about 15 minutes. Drain well.
- In the same pot, heat milk, butter, and garlic until the butter is melted and the mixture is hot.
- Mash the potatoes and then mix in the hot milk mixture. Season with salt and pepper to taste.
- Asparagus:
- Melt butter in a skillet over medium heat.
- Add the asparagus and cook until tender, about 4-5 minutes.
- Stir in lemon zest, lemon juice, salt, and pepper just before serving.
