Herb-Crusted Lamb Chops with Garlic Mashed Potatoes and Lemon-Butter Asparagus

Ingredients:

For the Lamb Chops:

  • 4 lamb chops
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp rosemary, finely chopped
  • 1 tsp thyme, finely chopped
  • Salt and pepper to taste

For the Mashed Potatoes:

  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Asparagus:

  • 1 bunch asparagus, ends trimmed
  • 2 tbsp butter
  • 1 lemon, zest, and juice
  • Salt and pepper to taste

Directions:

  1. Lamb Chops:
    • Preheat your grill or skillet over medium-high heat.
    • Mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture over the lamb chops.
    • Grill or sear the chops for 3-4 minutes on each side or until they reach your desired level of doneness.
    • Let them rest for a few minutes before serving.
  2. Mashed Potatoes:
    • Boil the potatoes in salted water until tender, about 15 minutes. Drain well.
    • In the same pot, heat milk, butter, and garlic until the butter is melted and the mixture is hot.
    • Mash the potatoes and then mix in the hot milk mixture. Season with salt and pepper to taste.
  3. Asparagus:
    • Melt butter in a skillet over medium heat.
    • Add the asparagus and cook until tender, about 4-5 minutes.
    • Stir in lemon zest, lemon juice, salt, and pepper just before serving.
