Fresh Strawberry Pie

Ingredients:

1 pre-baked 9-inch pie crust (homemade or store-bought)
4 cups fresh strawberries, hulled and halved
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1/2 teaspoon vanilla extract
Whipped cream for serving (optional)
Directions:

Begin by pre-baking your pie crust according to the package instructions if using a store-bought one. If making a homemade crust, bake and let it cool completely.

In a medium saucepan, combine the granulated sugar and cornstarch. Mix them well.

Add the water to the saucepan and stir until the sugar and cornstarch are dissolved.

Place the saucepan over medium heat and bring the mixture to a boil. Stir constantly to avoid lumps.

Once the mixture is boiling, reduce the heat to low and simmer for 2-3 minutes or until it thickens and becomes translucent.

Remove the saucepan from heat and stir in the vanilla extract.

Let the sugar mixture cool for a few minutes.

Arrange the halved strawberries in the pre-baked pie crust.

Pour the cooled sugar mixture evenly over the strawberries, ensuring they are well coated.

Refrigerate the pie for at least 4 hours, or until it’s set and the strawberries are glazed.

Serve the Fresh Strawberry Pie chilled, with a dollop of whipped cream if desired.
