  • 3 to 4 pounds boneless chuck roast
  • Kosher salt and ground black pepper
  • Olive oil
  • 4 tablespoons unsalted butter
  • 4 large yellow onions (thinly sliced)
  • 6 cloves fresh garlic (minced)
  • ¾ cup white grape juice
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • Fresh herbs: bay leaves, rosemary, thyme
  • 1 cup freshly shredded Gruyere cheese

Instructions

  1. Preheat your oven to 300°F.
  2. Season the chuck roast generously with kosher salt and pepper on both sides.
  3. In a Dutch oven, heat olive oil over medium-high heat and sear the chuck roast until golden brown on each side. Remove from pot.
  4. Reduce heat to medium, add butter, and then the sliced onions. Cook until caramelized (about 25–30 minutes).
  5. Stir in minced garlic and sauté for 2 minutes. Deglaze with white grape juice and let it reduce by half.
  6. Add beef broth, Worcestershire sauce, bay leaves, rosemary, and thyme; bring to a simmer.
  7. Return the roast to the pot ensuring it is submerged in liquid.
  8. Cover tightly and braise in the oven for about 3.5 hours until tender.
  9. Shred the beef in the pot and top with Gruyere cheese; return to oven at 400°F until cheese melts (5–7 minutes).
  10. Serve warm over mashed potatoes or with toasted baguette slices.
