  • 1 cup cottage cheese
  • 4 large eggs
  • ½ cup rolled oats (blended into oat flour)
  • 1 scoop vanilla protein powder
  • 1 cup blueberries (fresh or frozen)
  • 23 Tbsp maple syrup (or sugar-free maple syrup)
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. Blend oats until they reach a fine flour consistency.
  3. In a blender or mixing bowl, combine cottage cheese, eggs, sweetener, vanilla, lemon juice, and protein powder. Blend until smooth.
  4. Stir in the oat flour, cinnamon, baking powder, and optional salt until fully mixed.
  5. Gently fold in the blueberries.
  6. Pour the batter into a greased 8×8” baking dish.
  7. Bake for 35–40 minutes until set and golden around the edges.
  8. Allow to cool slightly before slicing into squares.
