Ingredients :
4 Bananas
Pudding
3/4 cup sugar
4 Tbsp. flour
1/8 tsp. salt
1 whole egg
3 cups milk
4 egg yolks (save the whites for meringue)
1 tsp. vanilla
Crust
1 package vanilla wafers
Meringue
4 egg whites
1/4 cup sugar
Directions:
A 400 degree oven is recommended.
Grease a 13 x 9-inch casserole dish.
Pudding
To a pot, add milk, sugar, flour, salt, and one whole egg.
Combine thoroughly.
Mix thoroughly after adding the four egg yolks.
Stirring regularly, cook the mixture until it thickens over medium-low heat.
The thickening of the sauce takes around 10 to 15 minutes.
Add the vanilla when the sauce has finished simmering and mix.
The Crust
Vanilla wafers should be used to line the bottom and edges of a casserole dish.
Just before the pudding is finished, slice two bananas and place them on top of the vanilla wafers to prevent browing.
Wafers and bananas should be covered with half of the pudding.
Lay two additional banana slices on top of the pudding.
Over the bananas, spread the remaining pudding.
Meringue
Whip the egg whites in a large bowl until firm peaks form.
Stir in the sugar after adding it.
Bake the meringue for 8 to 10 minutes, or until it turns golden brown, over the pudding mixture.
Before serving, let the food cool in the refrigerator for at least an hour.
