Ingredients:
- 1 lb dried lima beans
- 2 smoked turkey necks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, chopped
- 6 cups chicken broth or water
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Directions:
- Rinse the lima beans and soak them overnight in cold water.
- Heat olive oil in a large pot over medium heat. Add the chopped onions, garlic, and bell pepper, cooking until the onions are translucent.
- Drain the lima beans and add them to the pot along with the smoked turkey necks, chicken broth (or water), thyme, and bay leaf.
- Bring the mixture to a boil, then reduce the heat, cover, and simmer for about 2 hours, or until the beans are tender and the meat is falling off the turkey necks.
- Remove the turkey necks from the pot. Once cool enough to handle, remove the meat from the bones, discard the bones, and return the meat to the pot.
- Season the stew with salt and pepper to taste. Simmer for an additional 30 minutes.
- Serve hot and enjoy the comforting flavors.
