Lima Beans with Smoked Turkey Necks

Ingredients:

  • 1 lb dried lima beans
  • 2 smoked turkey necks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 6 cups chicken broth or water
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Directions:

  1. Rinse the lima beans and soak them overnight in cold water.
  2. Heat olive oil in a large pot over medium heat. Add the chopped onions, garlic, and bell pepper, cooking until the onions are translucent.
  3. Drain the lima beans and add them to the pot along with the smoked turkey necks, chicken broth (or water), thyme, and bay leaf.
  4. Bring the mixture to a boil, then reduce the heat, cover, and simmer for about 2 hours, or until the beans are tender and the meat is falling off the turkey necks.
  5. Remove the turkey necks from the pot. Once cool enough to handle, remove the meat from the bones, discard the bones, and return the meat to the pot.
  6. Season the stew with salt and pepper to taste. Simmer for an additional 30 minutes.
  7. Serve hot and enjoy the comforting flavors.
