Cheese Shrimp Penne Pasta with Spinach

Ingredients:
  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
Directions:
  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the shrimp with salt and pepper, and sauté until they turn pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
  3. In the same skillet, add garlic and cook for 1 minute. Add spinach and cook until it wilts, about 2 minutes.
  4. Pour in the heavy cream and chicken broth. Bring to a simmer and let it cook for 5 minutes.
  5. Stir in the grated Parmesan cheese and red pepper flakes (if using). Continue to simmer until the sauce thickens slightly.
  6. Add the cooked pasta and shrimp to the sauce, tossing to coat everything evenly.
  7. Serve hot, garnished with extra Parmesan cheese and red pepper flakes if desired.
