Moroccan Briouat Recipe

Briouats are essentially little pastries that have various contents inside of them before being cooked. Traditionally, briouats come from Moroccan cuisine. There are other recipes for this food, but the one from Briouats uses ground beef (Kofta, Kufta, or Kefta) that has been wrapped in filo pastry or warqa. This recipe’s filling has a light seasoning.
Kefta briouats can be served as an entrée, however they are typically served as an appetizer or finger food.

Ingredients :

200 g grated Emental cheese
200 g ricotta
15 g coriander
15 g parsley
¼ tsp ground ginger
½ tsp ground black pepper
½ tsp paprika
½ tsp chili powder
1 egg yolk – properly beaten
8 sheets of filo pastry
Oil, to fry

How to make : serves 4

Step 1: Combine the cheese, parsley, coriander, and spices in a big basin. Mix thoroughly.

Step 2: Fold a sheet of filo pastry in half lengthwise twice, starting with the first fold. Place a full tablespoon of filling 2.5 cm from the end that is closest to you. To form a triangle, fold it over the filling from the bottom right corner to the top left corner. The triangle is folded, the tip from the bottom left edge is brought up, and it is then placed along the left corner. The bottom left corner should now be flipped over such that it touches the top right border. In this manner, flip the triangle over repeatedly until all of the filo has been used. Egg yolk should be brushed over the edges to seal them. Repeat this procedure with the remaining filling and filo pastry.

Step 3: Fry your briouats in oil that has been heated over a medium temperature. For 2-3 minutes, fry each side. Remove from heat and dab excess oil with a paper towel.
